Lo que vamos a conseguir es que la carne adquiera una textura m\u00e1s f\u00e1cil de morder, un poco m\u00e1s tersa y compacta. Rellena un tuper de agua y disuelve las dos cucharadas de sal. Mete dentro al carne y ci\u00e9rralo. Gu\u00e1rdalo en la nevera 2-3 horas.<\/li>\n<li>Una vez pasado ese tiempo, saca la carne de la salmuera y s\u00e9cala bien. C\u00f3rtala en trozos de uno 7-8 mil\u00edmetros, como en dados. En un cuenco ali\u00f1a la carne con aceite de oliva virgen extra, pimienta negra reci\u00e9n molida y las alcaparras.<\/li>\n<li>Sirve la carne en un plato y coloca una yema de huevo en el centro. Termina con m\u00e1s pimienta y unas rodajas de rabanito muy finas por encima.<\/li>\n<li>Para comerlo, rompe la yema, mezcla todo y c\u00f3metelo con pan untado con mantequilla.
