Cali\u00e9ntala hasta que se funda y deja que se cocine removiendo para que no se queme. Poco a poco, las partes s\u00f3lidas de la mantequilla empezar\u00e1n a tostarse, adquiriendo un olor avellana y un olor muy caracter\u00edstico. Retira del fuego en ese momento. Deja enfriar la mantequilla en otro recipiente durante al menos 30 minutos.<\/li>\n<li>En un bol bate la mantequilla con los az\u00facares. Tiene que empezar a blanquear la mezcla, quedando algo espumada. A\u00f1ade el huevo y la cucharada de agua. Termina de batir muy bien.<\/li>\n<li>En otro bol mezcla la harina, la sal, el bicarbonato y el caf\u00e9 soluble. A\u00f1ade esta mezcla a la de la mantequilla y los huevos en dos partes. Primero la mitad, mezcla con cuidado, y luego la otra mitad. No batas, sino mezcla, despacio y sin menear mucho la masa, lo m\u00ednimo para que se incorporen los ingredientes.<\/li>\n<li>Pica el chocolate en trozos con un cuchillo grande e incorp\u00f3ralo a la mezcla. Gu\u00e1rdate unos 20 trozos de chocolate.<\/li>\n<li>Si la masa est\u00e1 muy blanda, gu\u00e1rdala en la nevera unos 30 minutos. La mantequilla a temperatura ambiente es blanda, pero cuando se enfr\u00eda se solidifica, por eso la masa cambia de textura cuando se calienta.<\/li>\n<li>Haz bolas de 60-65g, col\u00f3calas en un plato y pon dos trozos de chocolate encima y un poco de sal en escamas. Guarda las bolas en la nevera m\u00ednimo durante 30 minutos. Si prefieres, puedes congelarlas y cuando quieras meterlas directamente al horno precalentado (sin descongelar previamente).<\/li>\n<li>Para hornearlas, precalienta el horno a 180\u00baC calor arriba y abajo. Disp\u00f3n las bolas en una bandeja con papel de horno separadas 10cm las unas de las otras. M\u00e9telas al horno. Pasados 10-12 minutos, saca la bandeja del horno y d\u00e9jala caer sobre una superficie plana desde una altura de 15-20 cm. <em>Lo que vamos a hacer acelerar el proceso que realiza una galleta en el horno (primero la bola se funde, luego, cuando empieza a coagularse, se hincha, y al final se rompe y cae por su propio peso). Aqu\u00ed vamos a romper esa elevaci\u00f3n 3 o 4 veces, obteniendo una galleta m\u00e1s plana y con unos bordes MUY crujientes.\u00a0<\/em>Mete inmediatamente las galletas y pasados 2 minutos repite el mismo proceso.<\/li>\n<li>Haz esto 2 veces m\u00e1s. Cuando hayan pasado 16-18 minutos en el horno saca la bandeja y deja enfriar completamente las galletas antes de manipularlas. Puede parecer que est\u00e1n crudas al principio, pero hazme caso, luego solidifican (recuerdas lo de la mantequilla caliente?).<\/li>\n<li>Esc\u00f3ndelas si quieres que duren m\u00e1s de 24h.<\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"<p>Comienza colocando la mantequilla en un cazo.
