{"id":153,"date":"2022-10-21T12:15:37","date_gmt":"2022-10-21T12:15:37","guid":{"rendered":"https:\/\/soulinthekichen.com\/?p=153"},"modified":"2022-12-05T14:37:56","modified_gmt":"2022-12-05T14:37:56","slug":"153","status":"publish","type":"post","link":"https:\/\/soulinthekitchen.com\/index.php\/2022\/10\/21\/153\/","title":{"rendered":"Lemon pie a trozos"},"content":{"rendered":"<p>Proceso:<\/p>\n<ol>\n<li>Se hacen las tres partes por separado y luego pueden guardarse sin problema hasta la hora de montar los platos.<br \/>\nPara empezar con el crumble precalienta el horno a 180\u00baC calor arriba y abajo.<\/li>\n<li>Corta en dados la mantequilla fr\u00eda y m\u00e9zclala con el resto de los ingredientes usando la yema de los dedos. No hay que amasar, tampoco batir, sino ir deshaciendo la mantequilla apretando y desmenuzando con los dedos. Tiene que quedarte una textura como de arena de piedrecitas y si hay alg\u00fan trozo m\u00e1s grande, no pasa nada.<\/li>\n<li>Times Move Slow es mi favorita del disco, y tambi\u00e9n este momento de mancharse las manos. Esparce la masa sobre una bandeja de horno forrada con papel de horno y horn\u00e9ala durante 15 minutos o hasta que est\u00e9 todo bien doradito. Saca el crumble del horno y d\u00e9jalo enfriar sin prisa. Cuando pase una hora ya puedes romperlo en trozos y guardarlo en un recipiente.<\/li>\n<li>El lemon curd tiene su intringuilis, pero la paciencia y el fuego bajo siempre son la soluci\u00f3n. En un cazo bate con unas varillas las yemas de huevo, el zumo de lim\u00f3n y el az\u00facar. Pon el fuego bajo y no dejes de remover, poco a poco ir\u00e1 espesando y cogiendo textura. Cuando untes una cuchara y al pasar el dedo se quede el surco, puedes sacar del fuego el cazo, a\u00f1adir la mantequilla y un poco de ralladura de lim\u00f3n y terminar de mezclar todo bien. Deja enfriar a temperatura ambiente hasta que est\u00e9 templado el curd. Aviso ya. Es adictivo. M\u00e9telo en la nevera antes de que lo vea nadie.<\/li>\n<li>Lavender y montar merengue. Coloca las claras de huevo en un bol y con unas varillas el\u00e9ctricas (por el bien de tus b\u00edceps usa varillas el\u00e9ctricas) ve batiendo. Primero a la menor intensidad y poco a poco ve aumentando la velocidad.<\/li>\n<li>Cuando est\u00e9 medio montado (unos 5 minutos aprox), haz el alm\u00edbar. Esto es un merengue italiano, que se hace preparando un alm\u00edbar b\u00e1sico y mezcl\u00e1ndolo caliente con las claras, para que se \u201ccocinen\u201d. En un cazo calienta el agua y el az\u00facar durante 7 minutos, hasta que espese un poco (se puede quemar, as\u00ed que no le quites el ojo al fuego).<\/li>\n<li>Entonces empieza a verter el alm\u00edbar en forma de hilo (que caiga muy poco a poco) mientras bates con las varillas. Sin prisa ni pausa. Hasta que se incorpore todo el alm\u00edbar. Sigue batiendo durante unos 5 minutos m\u00e1s a toda potencia.<\/li>\n<li>Cuenta la leyenda que el merengue est\u00e1 bien hecho cuando al ponerte el bol boca abajo sobre la cabeza, se queda intacto.<\/li>\n<li>Guarda en la nevera el merengue y el lemon curd hasta la hora de montar los platos. Al ritmo de Cashmere van a parecer obras de arte, ya te lo aseguro yo.
